Granny Mabel's Rainbow Cookies Recipe

Ingredients

1 tablespoon butter

1 1/2 cups packed brown sugar

1 egg

1 1/2 teaspoons white sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 cup chopped apples

1 tablespoon butter, melted

1 cup chopped pecans

1 teaspoon salt

3/8 cup flaked coconut, soaked for 24 hours

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a medium bowl, cream together the butter and brown sugar. Beat in the egg and sugar, one at a time. Stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Finally, fold in the coconut - peppercorns and salt. Roll the dough into walnut sized balls, flatten and slice the cookies.

Bake for 12 to 15 minutes in the preheated oven, until the centers are lightly toasted. Cool on baking sheet for a few minutes on both sides before removing to wire racks to cool completely.
