Pecan Meringue Pie Recipe

Ingredients

2 cups all-purpose flour

2 eggs

1/4 cup white sugar

1 cup unsalted butter

1 tablespoon vanilla extract

Directions

Preheat oven to 425 degrees F (220 degrees C) and grease a 10 inch pastry pan. In a medium bowl, stir together 2 cups flour, eggs, sugar, and butter until smooth. Kne the butter mixture with vanilla, and pour into prepared pan.

Bake in the preheated oven for 30 minutes, or until a knife inserted into the middle comes out clean. Allow to cool before serving.

This was really good, but I would use some extra seasoning. I used my child's food as a nice way to get all the ingredients together. Then I just made up a batch of "espresso Cool Whip", and put it in the freezer to figure out what to do with. It would have been perfect...until I realized that my husband wouldn't have enough. So I just made this into a casserole instead of individual enchiladas. He loved it, and I was scared of him asking for more. But he was awesome--he was eating enchiladas with his meal! WTG Chef John!
