Gazpacho II Recipe

Ingredients

3 eggs

1 tablespoon olive oil

1 medium onion, chopped

1 medium green bell pepper, chopped

1 medium red bell pepper, chopped

1 medium green bell pepper, chopped

1 medium orzo veggie, chopped

1 medium tomato, chopped

1 medium onion, diced

1 tablespoon chopped fresh chives

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh dill

1 cup shredded Monterey Jack cheese

1 cup shredded sharp Cheddar cheese

Directions

Preheat oven to 425 degrees F (220 degrees C).

Place eggs, olive oil, onion, green pepper and red bell pepper into a large saucepan. Mix thoroughly.

Bring a large pot of water to a boil. Stir that into egg mixture. Bring mixture to a boil. Mix in veggie mixture and tomato. Cook, stirring, until eggs are set, about 45 minutes.

Stir cooked egg mixture into tomato mixture, stirring, until well blended. Mix cooked egg mixture into vegetable mixture, mixing just until thickened. Stir cooked egg mixture into vegetables and cheese mixture just until blended.

Fry the ham in a medium skillet. Crack black pepper cloves into ham mixture and fry until pureed.
