Fat-Free Spaghetti Sauce Recipe

Ingredients

1 (12 ounce) package Italian dressing

2 tablespoons white sugar

1 tablespoon honey

1 (1 ounce) square unsanforized cheese, cubed

1/2 cup shredded mozzarella cheese

Directions

In a medium bowl, mix 1/2 cup sugar, honey, cheese and unsanforized cheese. Cover and refrigerate for 48 hours.

Preheat oven to 350 degrees F (175 degrees C).

Arrange the sauce in a single layer in the bottom of a large saucepan. Place a half cup of the spaghetti sauce into each pan.

Bake at 350 degrees F (175 degrees C) for 1 hour, stirring occasionally to prevent burning. Remove saucepan from heat and let stand for 10 minutes. Pour sauce into saucepan. Cover saucepan and let cool completely.

I ended up settling for a much better taste with each successive try. Because of limited ingredients, I didn't have any palm sugar, so I'd have to make my own. I'd double the filling, cut down on the cream, and use the spices smartly--the chickpea, the oregano, the cumin--all superb. If I made this again, I'd double the filling, and make sure to massage the chickpeas a bit first to make them pliable. Second, I omitted the mint, which I didn't have, and didn't feel right using it since I knew it would make the dish unpleasantly thick. Even with all that tinkering, this is a great recipe -- and potentially much better than store bought condiments.
