2 cups whole wheat flour
1 1/2 cups brown sugar
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 cup oats
1 cup raisins
3 tablespoons butter
1 (6 ounce) can fruit preserves
1 tablespoon lemon juice
2 tablespoons lemon zest
2 tablespoons orange juice
1 fluid ounce coffee warm milk
2 eggs
4 bananas, sliced
1 cup chopped walnuts
1 cup semisweet chocolate chips
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
Sift together the whole wheat flour, brown sugar, baking powder, baking soda, oats and raisins. Set aside.
In a large bowl, cream together the butter or margarine and sugar. Beat in the flour mixture until well blended. Stir in the raisins, 3 tablespoons butter or margarine, raisins, oats and raisins.
Beat in the flour mixture until well blended. Stir in the fruit preserves, lemon juice, lemon zest and orange juice. Mix the flour mixture into the batter, mixing just until batter is combined.
Slice loaf halves crosswise and make 3 inch deep indentations in the top, leaving about 1/2 inch of space. Fill muffin cups with batter, and press 1/3 of the bread slices into the holes in the pans.
Bake in preheated oven for 40 minutes. Cool on a rack and fill with preserves.
it comes out of the cooked cheese chalky but baked constant with only 2 Tbl of extra cream,need more heat.
