1 cup pumpkin
1/3 cup lemon juice
1 third (1/2 cup) unsalted butter, melted
1 1/2 cups rolled oats
In a medium microwave safe bowl, stir together the pumpkin, lemon juice, butter and oats. Cover and chill at least overnight before using for shaping or cookies.
