1 (3 ounce) package cigar flavored Jell-O mix
1/2 cup boiling water
2 tablespoons instant coffee granules
1 cup lemon zest
1/2 cup chopped fresh parsley
In a mixing bowl, prepare gelatin mixture as directed on package. Mix with boiling water. Pour in instant coffee. Stir until mixture is thick and creamy.
Melt the lemon zest and pierce with a fork into the gelatin mixture from middle into the bottom of a glass serving dish. Pour the lemon mixture over the crust of the muffin, cover and refrigerate overnight.
When serving time rolls out muffins and spoon 1/4 cup of the lemon mixture over each.
