Easter Egg Weekend Recipe

Ingredients

5 eggs

1 tablespoon vegetable oil

2 large onions, chopped

1 medium tomato, chopped

2 teaspoons salt

1 (12 ounce) can whole peeled pineapple, with juice

1 cup cooked, processed chicken

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place eggs in a medium saucepan with enough water to cover them completely. Bring to a boil, stirring constantly. Reduce heat to low and cook, stirring constantly, for 2 minutes. Remove from heat, and stir in oil and onion. Beat gently for 2 minutes.

Add cooking juices, pineapple, chicken, tomatoes, salt and pepper. Mix together well and turn off the heat.

Bake in preheated oven for 1 hour. Allow to cool before serving.
