4 cups chopped celery
1 cup packed brown sugar
1/2 cup honey
1 cup butter, softened
1 (12 ounce) package frozen sliced strawberries
1 (3 ounce) can fruit preserves
Mix celery, brown sugar, honey, butter and strawberries with an electric mixer, until smooth. Spread onto a large serving platter, and refrigerate overnight.
Dice strawberries with a pastry knife and place in a large bowl. Pour preserves over celery mixture and arrange on top. Chill in refrigerator overnight or store frozen in tightly covered plastic bag.
