Chocolate Banana Pancakes Recipe

Ingredients

1 1/2 cups white sugar

1 teaspoon baking soda

1/2 teaspoon vanilla extract

2 eggs

2 1/2 cups power brown sugar

1 teaspoon banana extract

1 cup milk

1/2 cup corn syrup

1/2 teaspoon vanilla extract

1 cup chopped pecans

Directions

Beat sugar, baking soda and vanilla extract in large bowl until well blended. Stir eggs, brown sugar and banana extract into sugar mixture until well blended. Stir in milk, corn syrup and vanilla extract. Fold into pan. Cool slightly. Cover and refrigerate 2 hours or overnight.

After 2 hours, turn off oven and turn off oven heat. Remove banana from pods and set aside. Grease and flour 2 x 9 inch square pan.

In a large bowl, mix peach preserves, banana rind, pecans and banana mixture. Pour batter over peach mixture.

Bake in preheated oven for 1 hour at 350 degrees F (175 degrees C).
