1 bunch broccoli
1 quart water
1 clove garlic, minced
1 large tomato, diced
1 cup olive oil
1 (8 ounce) package cream cheese, diced
1/2 cup chopped fresh parsley
1/2 cup chopped green onions
5 ounces mozzarella cheese, shredded
1 (3 ounce) can sliced mushrooms, drained
HELP: Place broccoli in a large bowl; drain.
Stir garlic, tomato and olive oil into pan. Bring mixture to a simmer, stirring frequently. Cook over medium heat for 1 1/2 to 1 1 hour. Reduce heat to medium-low; cover.
Turn heat to low and add cream cheese and parsley. Bring mixture to a slow simmer for 15 minutes. Mix together, then mix in mozzarella cheese. Pour over broccoli and stir until smooth. Sprinkle with mushrooms.
