1/2 cup butter, softened
1/2 cup white sugar
1 cup whole wheat flour
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sliced sweet potatoes
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup milk
1 (12 ounce) can cherry pie filling
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together butter, sugar, whole wheat flour, baking powder, salt, sweet potatoes and lemon juice. Stir until blended. Mix in the lemon zest and lemon zest. Spread the mixture into a 9x13 inch baking dish. Garnish with cherries.
Bake uncovered at 350 degrees F (175 degrees C) for 30 minutes. Reduce temperature to 325 degrees F (165 degrees C) and bake an additional 15 minutes.
