3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1/2 teaspoon lemon zest
1 1/2 cups strawberries
1 1/2 cups sliced candied fruit
1 egg
2 cups milk
1 cup pineapple juice
1 cup blueberries
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 5 inch round baking pans.
In a large bowl, mix flour, baking powder and baking soda. Stir the lemon zest into the flour mixture and continue to stir, mixing to moisten the batter. Fold in the strawberries and fruit.
In a large bowl, beat butter, sugar and lemon zest. Mix the flour mixture into the butter mixture alternately with the blueberries. Pour into prepared pans.
Bake for 25 to 29 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
