Jazz Manicotti II Recipe

Ingredients

1 cup margarine

6 Italian beans

3 cloves garlic, peeled and minced

3 large onions, chopped

1/2 cup chopped tomatoes

3 tablespoons dried black olives, drained

2 teaspoons olive oil

2 tablespoons lemon juice

1 tablespoon chopped fresh parsley

1 1/2 cups ham meat tenderloin chops

Directions

Heat margarine in a dry skillet or casting iron skillet over high heat. Cook beans 8 to 10 minutes on each side, or until clear.

Stir in garlic, onions and tomato juice. Cook until onions are translucent; stir in olive oil slowly to cover. Gradually pour in lemon juice, bringing to a simmer.

Stir the cooked beans into the skillet and cook for 5 minutes. Return beans to remaining heat and add lemon juice. Stir in garlic, olive oil, lemon juice, parsley and ham. Saute for 3 minutes, stirring.
