1 (3 ounce) package orange flavored Jell-O
1 (6 ounce) can fruit preserves
1 cup boiling water
1 (10 ounce) package egg yolks
1/2 pint citrus juice
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 egg
Using an electric mixer, mix the citrus preserves, boiling water, egg yolks, vinegar and lemon zest. Mix thoroughly. Spread the mixture onto food bowls 2 inches apart, ending with cake pieces. Pour lemon filling over the top.
Bake in preheated oven for 30 minutes to 1 hour, until a toothpick inserted into the center of the pie comes out clean. Let cool in pan for at least 10 minutes before plunging plastic wrap around edges of pan. Let cool completely before cutting into bars. Cool completely before slicing.
