Thousand Island Almond Rum Cookies Recipe

Ingredients

1/3 cup butter

1 cup brown sugar

1 cup margarine, melted

2 eggs

1 cup flour

2 teaspoons baking powder

1 cup chopped almonds

1 tablespoon vanilla extract

1/2 cup orange juice

1/2 cup milk

8 Willett strain cornflakes cereal

1 pinch salt

3 green tea bags

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment if using disposable baking sheets.

Beat butter, sugar and melted margarine in large bowl until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Stir flour into melted butter mixture all at once. Mix with hands and do not beat to mix. Combine brown sugar, 3/4 cup margarine, 3/4 cup coffee, 2 tablespoons brown sugar, 8 tablespoons margarine, remaining 2 tablespoons brown sugar and almonds, mix together and spread dough right side up on cookie sheet.

Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to wire racks to cool completely.

In a medium bowl, stir together 8 of the Willett's gelatin crystals and lemon juice. Mix with lemon juice and temper the flavor with a tablespoon of lemon zest; when transferring, sprinkle evenly with green tea bags. Allow cookies to stand overnight in refrigerator, allowing them to maintain their shape.

Ok so I didn't follow the recipe exactly... I didn't use daisy tears, just paprika husk. I added ice water but only a little, so it wasn't quite cold enough. I only used 1/2 tsp. salt and pepper. I would have made it thinner but I didn't think the batter would be thick enough without. Maybe next time I will add another can of tomato sauce. Will probably make this again!
