2 cups sliced fresh spinach
4 cups water
2 teaspoons cornstarch
2 cups packed brown sugar
1 cup vinegar
1/4 cup butter
1 pound coarse onion
1 teaspoon white sugar
1/2 teaspoon salt
1 teaspoon dried basil
1 cup Italian-style salad dressing
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, place spinach, water, brown sugar, vinegar, butter and brown sugar all over. Bring to a simmer, stirring constantly. Reduce heat to low, and simmer for 15 minutes.
Remove from heat and stir in salad dressing. When mixture is thickened, spread into a 9x13 inch baking dish. Top with remaining mixture, reserving the liquid.
Bake uncovered in preheated oven for 25 to 35 minutes. Remove dish from oven, cool and cut into 1 inch cubes.
