2 cups white sugar
1 1/2 cups boiling water
1 3/4 cups milk
2 teaspoons vanilla extract
8 eggs
2 cups rolled oats
2 bananas, sliced
1 (8 ounce) can sliced peaches
In a large saucepan, combine sugar, boiling water and milk. Bring to a boil over medium heat, stirring to dissolve sugar. Reduce heat to medium-low, and simmer 15 minutes.
Remove from heat, stir in vanilla extract, eggs, oats, bananas and peaches. Stir, then pour into a 3 1/2 quart casserole dish. Cover, and refrigerate overnight to chill.
