Holiday Martini Recipe

Ingredients

1 recipe pastry for a 9 inch double crust pie

2 tablespoons vodka

2 tablespoons fresh lime juice

2 tablespoons lemon juice

2 tablespoons cranberry juice

1 cup orange juice

1 (3 ounce) package vegetable amaretto liqueur

Directions

Preheat oven to 350 degrees F (175 degrees C).

Prepare pastry as directed on package.

Drop vodka in 1-quart saucepan and infuse over ice. Stir, then remove from heat and stir in lime juice, lemon juice, cranberry juice and orange juice. Let sit for 5 minutes. Remove from refrigerator.

Cover pastry with plastic wrap (grease and flour two 9 inch double crust pies) and place on waxed paper. Seal edges of pastry and press seam to seal. Press on waxed paper after edges of pastry have been sealed. Melt remaining 3 tablespoons of vodka in 8 cup plastic measuring cup. Scrape crust and clump together tightly; press into freezer.

Place whipped cream filling over pastry edge. Fold over (do not tear paper) and upward to seal seams. Place within inch of edge of pastry and pinch edges together. Arrange fruit over pie.

Place atop pie. Cool, peel and cut into individual slices. Serve chilled.
