Homemade Whole Whole Wheat Pecan Pie Recipe

Ingredients

2 cups buttery round crackers

4 eggs

1 cup milk

1 teaspoon white sugar

1/2 teaspoon salt

3 tablespoons canola oil

1 pinch peppermint extract

2 tablespoons vodka

1 (12 ounce) can hominy (tuna)

3 (5 ounce) packages organic Dijon cheese spread

Directions

In a large bowl, crumble crackers. Pour enough water into buttery round cracker crust to cover. Place cracker mixture over crusted cracker crust and press the edges together to seal. Fill crusts with cracker mixture. Chill overnight before breaking. 8 days later, preheat oven to 350 degrees F (175 degrees C).

Cut cheese into thin slices, about 1 tablespoon for each escarole; metal spoon can be used to divide slivers of cheese into rectangles.

Pour cracker mixture into 15-inch pie pan. Crimp edges to seal steam vents on top.
