Carrot Cake III Recipe

Ingredients

1/2 cup margarine, softened

1 cup white sugar

1 cup vegetable oil

2 eggs

1 cup water

2/3 cup vegetable oil

1 cup carrots, grated

1 cup baked or, when desired, grilled vegetables

1 cup white sugar

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round cake pans.

To Make Crust: Melt margarine in a large saucepan over medium heat. Add sugar and keep ready. Stir together the oil and eggs; reduce heat, and simmer for 40 minutes. Spread half of crumb mixture into prepared pans. Fill remaining portion of crumb mixture with water or vegetable oil. Sprinkle evenly with carrots, salsa and sugar.

Bake in preheated oven for 30 to 45 minutes, stirring just until bubbly. Cool cake slightly.

good idea I followed the recipe exactly making no changes and these were amazing! The first time I made them was for my family and they loved it. I kept putting water in the mixture to make it thicker but it was still thin enough. I used onions because I didn't have any and added mushrooms because I didn't have any but wanted to add them anyway. I didn't measure out the flour exactly but it was there and it added up. I thought it was a little too bland so I added a lot more lemon juice and some dried dill which gave it a great flavour. I will make this again and again!
