1 medium onion, sliced
1 medium carrot, sliced
3 cups cooked white rice
salt and pepper to taste
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
Place onion, carrot and rice in bowl, toss vigorously, to coat.
Microwave at HIGH power for about 15 minutes, or until cabbage springs back when touched.
Stir in cheese, until coated.
