1 cup milk
2 eggs
1 1/2 cups granulated sugar
2 teaspoons baking soda
2 teaspoons vanilla extract
1 cup butter, softened
3/4 cup white sugar
4 eggs
1 teaspoon vanilla extract
1 cup chopped walnuts
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup evaporated milk
1 cup white sugar for decoration
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper liners.
In a large saucepan, mix 1 cup milk and eggs. Bring milk mixture to a boil, stirring occasionally. Boil 1 minute. Remove from heat. Stir in sugar, baking soda, vanilla extract, butter or margarine, and 3/4 cup sugar. Stir together until smooth. Stir in egg mixture and white sugar by hand until just blended. Fold into muffin batter.
Set muffin pan on medium heat. Place 1/2 cup muffin in pan, pressing firmly to seal. Pour batter into prepared pan.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted in center of muffin comes out clean. Cool on a wire rack.
