1 (9 inch) prepared pie crust
1 (2 ounce) can sliced pimento-stuffed green olives
1 (3 ounce) package cream cheese, softened
1 cup orange juice
1 1/2 cups white sugar
6 eggs
2 teaspoons lemon zest
1 cup orange juice
1 cup milk
1 tablespoon prepared blue cheese spread
1 tablespoon lemon zest
1 tablespoon vanilla extract
1/2 cup shredded Cheddar cheese
Preheat oven to 375 degrees F (190 degrees C).
Melt the pimento-stuffed green olives in a medium saucepan. Beat the cream cheese, orange juice, sugar, eggs and lemon zest in a medium bowl. Stir the lemon zest and cream cheese mixture into the creamed mixture. Mix the lemon zest, vanilla and Cheddar cheese into the creamed mixture.
Pour mixture into pastry-lined pie crust. Cover and refrigerate. Serve at room temperature.
