1 1/2 cups evaporated milk
1 teaspoon baking soda
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice
1 teaspoon pumpkin pie spice
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix evaporated milk, baking soda, egg, vanilla, pumpkin pie spice and pumpkin pie spice. Add cereal, beans and oats. Mix until well blended.
Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
