1 (28 ounce) package fresh or frozen spinach, rinsed and drained
1 1/2 cups chopped green peppers
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green olives
1/2 cup sliced red olives
2 carrots, chopped
shredded Parmesan cheese
1 special Italian seasoning packet for garnish
Place spinach in a fruit bowl or small mixing bowl and mix in olive, onion and green pepper; sprinkle the 1/2 cup of spinach over green peppers and celery, shortening the mixture.
In a large bowl, mix green pepper, green onions, lettuce, olives (optional), carrots and cheese, season with special seasoning packet and spoon mixture over spinach and vegetable mixture. Drain shell and toss with greens and cheese. If desired, garnish with about 1 tablespoon of Parmesan shell.
