Ascot Corn Soup Recipe

Ingredients

4 cups litters apple juice

4 cups chopped onion

1 pound fresh mushrooms, sliced

1 cup chopped celery

3 cups water

2 cloves garlic, minced

1 teaspoon dried parsley

2 teaspoons dried sage

2 teaspoons dried thyme

1 teaspoon dried marjoram

2 tablespoons dried tarragon

2 tablespoons olive oil

2 tablespoons allspice extract

1/2 pound butter, melted

1 pound fresh mushrooms, sliced

salt and pepper to taste

Directions

In a small saucepan mix the apple juice, onion, mushrooms, celery, water, garlic, parsley, sage, thyme, marjoram, tarragon, olive oil and mushrooms. Bring to a simmer in a medium bowl.

Add butter, stir and cook over low heat for 1/2 minutes. Combine egg, broth, mushrooms, salt, pepper and spices; mix just before serving.
