3 cups all-purpose flour
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 egg
1 1/2 cups milk
1 1/2 teaspoons vanilla extract
1 1/2 cups flaked coconut
1 (8 ounce) can crushed pineapple
1/2 cup cornflakes cereal
Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin cups or line with paper muffin liners.
In a large bowl, mix flour, cocoa, baking soda, baking powder, baking soda and salt. Fold in egg, milk, 1 cup of sugar and 1/2 cup of coconut.
Mix crushed pineapple, cornflakes cereal and molasses; pour mixture into prepared muffin cups.
Bake in preheated oven until muffins are golden brown, about 30 minutes.
