2 cups chicken broth
1 (2 pound) whole chicken, cut into cubes
4 slices bacon, cut into thin strips
1 medium onion, sliced
2 cups cream cheese
1 cup sliced mushrooms
1/4 cup shredded Cheddar cheese
In a medium bowl, mix chicken broth, chicken, bacon and onion. Cover and refrigerate at least 3 hours for chicken to absorb.
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, combine cream cheese, mushrooms, Cheddar cheese, chicken and bacon. Bring to a boil, stirring frequently. Remove from heat and stir in cream cheese mixture.
Transfer chicken mixture to a 9x13 inch baking dish. Sprinkle with cream cheese mixture. Broil uncovered over high heat for about 10 minutes.
Broil uncovered for about 20 or until chicken is tender. Top with Cheddar cheese and serve.
