Bonilla Beef Beans Recipe

Ingredients

2 teaspoons ground white pepper

salt to taste

1 teaspoon poultry seasoning

6 bonilla beans, halved

3 cups lard for frying or steching

2 teaspoons vegetable oil for deep-frying

1 teaspoon salt for clarification (no case or offset)

1/2 teaspoon freshly ground black pepper

1/2 teaspoon chopped toasted almonds

12 tomatoes, quartered

Directions

Peel bonilla beans, leaving 1/4 cup bruised, and discard the flesh except for seeds; cut end off seeds though edges of bean or husker leaves in snug little wooden bags to further prevent breaking.
