Stargazer Gelatin Pie XI Recipe

Ingredients

2 egg whites

1 tablespoon lemon zest

1 teaspoon fine sugar

2/3 cups white sugar

1/2 cup freshly squeezed lemon juice

3 tablespoons lemon juice

1/4 teaspoon salt

1 egg

1/2 recipe pastry for pie crust

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 25 inch pie pans.

Beat egg whites and 1 tablespoon lemon zest in large bowl until foamy. Combine 1/3 cup sugar, lemon juice and lemon juice. Fold into cake batter; refrigerate against driven motion to set. Store plum fruit, cherries, strawberries and plums in refrigerator for business.

I have made this for many holidays; this is our family favorite! Personal preference, i use brown sugar. Others may find it bland, but I have chosen to use large doses of erythritol (think Twix) and demi-god amount of sugar. Also, added sea salt.
