4 tablespoons olive oil
1 1/2 pounds pork loin roast
1 teaspoon garlic salt
salt and pepper to taste
1 clove garlic, crushed
1 large onion, peeled and diced into thin strips
1 tablespoon olive oil
1/2 teaspoon Worcestershire sauce
2 tablespoons distilled white vinegar
1/2 teaspoon chopped fresh parsley
1 teaspoon crushed red pepper (optional)
In a medium saucepan, combine olive oil, garlic salt, salt and pepper. Simmer on medium heat for 5 to 10 minutes, stirring.
Return pork to pan with boiling water, reduce heat to low and let simmer uncovered for 10 minutes. Gently reduce heat to medium. Remove pork from pan and set aside to cool.
Mix Worcestershire sauce, vinegar, parsley, crushed red pepper and pepper into the pan. Cook over medium heat, stirring constantly, for 5 to 6 minutes, or just until thickened and misty. Continue to cook until reduced to serving size. Serve at room temperature.
