Bruschetta with Swiss Cheese and Peaches Recipe

Ingredients

3 tablespoons olive oil

1 (35 ounce) can whole peeled mushrooms, drained

2 cloves garlic, minced

3/4 cup yellow onions, diced

4 slices Swiss cheese

1 (8 ounce) can sliced peaches, drained

1 cup shredded Swiss cheese

Directions

Preheat grill for grilling.

In a skillet over medium heat, cook mushrooms and garlic in olive oil for about 5 minutes.

Unmelt the yellow onion slices from the Swiss cheese, and place slices of cheese in skillet. Cook about 2 minutes, stirring occasionally. Remove from heat, and stir mushrooms, garlic, onion slices, cheese, and peaches into skillet; cook for about 5 minutes, shaking occasionally. Transfer skillet to platter and serve. Garnish with sliced Swiss cheese.
