1 cup brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla extract
2 eggs
1 cup chopped pecans
1 cup applesauce
3 tablespoons white sugar

1/4 teaspoon ground cinnamon
4 tablespoons butter, melted
1/2 cup cranberry juice
2 tablespoons water
1 tablespoon lemon juice
2 tablespoons cinnamon
Preheat muffin - pan to 350 degrees F (175 degrees C).
In a medium saucepan, combine brown sugar, butter, egg, vanilla, eggs, pecans, applesauce, sugar, baking soda, cinnamon, and butter until combined. Mix well. Pour into prepared muffin pan.
Bake in preheated 350 degrees F (175 degrees C) oven for 45 minutes.
