2 boneless skinless, boneless chicken thighs
1 cup orange juice
1/2 cup brown sugar
1 tablespoon butter
1 (10 ounce) package frozen whipped topping, thawed
1 (4 ounce) can sliced fresh orange
1 teaspoon vanilla extract
3/4 cup white sugar for garnish
Place chicken in a large skillet. Cook over medium-high heat until evenly brown on both sides. Remove chicken from skillet, and place in a large bowl. Sprinkle orange juice, brown sugar, and butter over chicken. Mix together the orange juice, orange juice, brown sugar, and butter; pour mixture over chicken.
Heat the orange juice in a small saucepan, stirring occasionally until thickened. Mix with the whipped topping and orange. Garnish with sliced orange and vanilla extract.
Place chicken on a large platter and sprinkle with orange slices and orange slices of garnish with vanilla.
