2 eggs
1 (8 ounce) package cream cheese, softened
6 ounces sliced Swiss cheese
1 1/4 cups frozen strated carrots, thawed
1 (8 ounce) can minced onion
3 eggs
1 small green bell pepper, chopped
1 cup skim milk
1 cup shredded mozzarella cheese
1 cup chopped kale
1 (8 ounce) pastry bag
In a medium bowl, beat eggs together. Stir in cream cheese, Swiss cheese, carrots, onion, eggs and bell pepper. Beat until combined. Spread mixture into a prepared 8 inch square baking pan. Roll up pastry, and reseal inside to seal edges. Top with sliced whipped spinach.
Place a large filling in the center of each pastry bag. Arrange sliced shredded mozzarella cheese on top of fill, and top with kale and top with mozzarella cheese.
Bake in preheated oven for 5 to 10 minutes, or until quiche is bubbly. Cool on baking sheet.
