1/2 cup white sugar
1/3 cup lemon juice
1/4 cup lemon zest
1 teaspoon vanilla extract
2 eggs
1 1/2 cups amber rum
1 cup sliced peaches
1/2 cup chopped pecans
1 cup chopped dates
1 cup chopped pecans
1 cup chopped walnuts
In a large bowl, stir together sugar, lemon juice, lemon zest and vanilla extract. Mix well, then pour into glasses and pour over ice in glass or metal bowls. Chill overnight.
After the fruit has been chilled enough for it to be in a liquid form, remove wrapper and cut into strips. Place in refrigerator; remove fruit before slicing.
