Evergreen Squash Casserole Recipe

Ingredients

1/2 cup butter, softened

1 cup all-purpose flour

1 teaspoon baking powder

1 pinch salt

1 tablespoon unsalted butter

3 eggs

1/2 cup milk

2 teaspoons lime juice

1/4 cup orange juice

1 cup chopped green onion

2 teaspoons sweetened orange juice

1 cup chopped pecans

1 cup fresh spinach

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a medium baking dish.

In a medium bowl, cream together the butter, flour, baking powder and salt until smooth. Beat in the eggs, one at a time, then stir in the milk. Mix in the margarine, lime juice, orange juice, orange juice and pecans. Pour the batter into the prepared pan.

Bake in the preheated oven for 40 minutes. Reduce heat to 350 degrees F (175 degrees C).

Remove the baking sheet from the oven and brush the top of the casserole with the lemon/lime juice and orange juice. Brush with the spinach. Return to the oven for another 30 minutes.
