Coconut Cream Pie IV Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 (10 ounce) package crushed pineapple flavored Jell-O

1 cup chopped pecans

3 eggs

1/2 cup white sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 eggs

Directions

In a large mixing bowl mix cream cheese, pineapple flavored gelatin, pecans, eggs and sugar until well blended. Pour into a 9 inch pie pan.

Bake in preheated oven for 20 minutes or until set, but do not brown. Cool completely before cutting into bite-sized squares.

These were amazing!! My husband and I actually had bags of Hershey's Dark Cocoa powder in our fridge when I made these. I didn't know how to make it but I was really excited about them and wanted to try them. I was worried that they would be too sweet but they were great. I used olive oil instead of shortening and added the chocolate chips at the bottom of the crust. I could see adding white sugar at the bottom to really thicken the crust. I used Ambrosia dark chocolate but I didn't have any. I'd say these were very good but I'd make them again -- and will try with fresh ingredients.
