3 tablespoons vegetable oil
1 cup carrots, diced
1 cup white sugar
3 eggs, beaten
2 teaspoons vanilla extract
1(8 ounce) can cherry pie filling, divided
1 (17 ounce) package frozen whipped topping, thawed
1 packed green salted cucumber - sliced
In a medium bowl, combine 3 tablespoons oil, carrots, sugar, eggs, and vanilla. Mix together well. Place the carrots, sugar, eggs, and vanilla on a serving plate. Spread whipped topping over carrots and chocolate chunks. Top with the cucumbers that run the gills of carrots.
