Sloppy Joes II Recipe

Ingredients

1 pound lean ground beef

1 1/2 cups chopped onion

1 cup chopped celery

1/4 cup chopped green bell pepper

1 teaspoon minced garlic

1/4 teaspoon salt

1 (16 ounce) can crushed pineapple with juice

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

1 tablespoon lemon juice

4 teaspoons rice wine vinegar

3 tablespoons brown sugar

1 teaspoon salt

1 teaspoon dried oregano

1/2 teaspoon dried rosemary

Directions

In a medium-size mixing bowl, combine ground beef, onion, celery and green pepper. Mix thoroughly and shape into a tightball. Transfer into a lightly greased 9x13 inch baking dish.

In a medium-size mixing bowl, combine garlic, salt, pineapple, soy sauce, brown sugar, lemon juice, vinegar, brown sugar, lemon juice and rice wine vinegar. Mix thoroughly and shape into a tightball.

Bake at 350 degrees for 30 minutes. Arrange the meat mixture on the baking sheet. Bake for about 5 minutes, then reduce heat to 400 degrees F (200 degrees C).

Bake uncovered for 40 to 45 minutes, stirring occasionally, until meat is tender. Cool for 10 minutes and remove from pan. Cover and refrigerate overnight.

While the meat is cooking, mix together the pineapple juice, brown sugar, lemon juice and rice vinegar. Pour mixture over the meat mixture.

When the meat is tender, coat with brown sugar, lemon juice and rice vinegar. Shape the meat into a tightball. Spread the pineapple mixture over the meat mixture. Seal the edges of the pan. Bake for an additional 10 minutes. Remove from oven. Cool meat thoroughly before slicing.

Let me start by saying that I did NOT prepare this Bread expressly for Easter. This was what my family used for lunch and it was recommended to me by a Spanish Priest. Perhaps I will make this again but for now give it 4 stars instead of 5 because it was really easy to make and arrived tastefully timed. The texture was fantastic! more sandwich than biscuit - but really good quality.

I love sloppy joes, I make them year round,I have a bunch in the freezer, and one of my daughters is going to eat them for breakfast tomorrow. I thought I'd give this recipe a try, just for fun, she wasn't too impressed but that's because she's not looking forward to it--she's had enough of it already. The recipe starts with a very dry mustard, which I always add a touch of cayenne for a little extra zing. I always rub the mustard and cayenne pepper flakes through the sugar before putting it in the oven for the last 10 minutes, making the snack even more flavorful. The dough is not meant to be eaten, but rather, a treat--just like Reese pieces.
