1 sweet potato, peeled and cubed
1 1/2 cups milk
1 (10 ounce) package frozen mixed vegetables, thawed
1/2 cup all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter, melted
Preheat oven to 375 degrees F (190 degrees C). Grease and flour an 8x8 inch casserole dish.
In a large bowl, mix together the sweet potatoes, milk, mixed vegetables, flour, baking powder, baking soda and salt. Stir until well blended. Divide the mixture into six 2 inch segments. Spread each segment on the prepared baking dish.
Bake in preheated oven for 30 minutes, or until crisp and lightly browned. Remove from oven, cool and serve.
