Blueberry Muffins Recipe

Ingredients

1 cup butter, softened

1 cup brown sugar

2 eggs

1 teaspoon vanilla extract

1/2 cup white sugar

1 cup milk

1 (10 ounce) package cream cheese

1 teaspoon vanilla extract

2 teaspoons baking powder

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a large bowl, cream together butter, brown sugar and eggs. Mix in vanilla extract, sugar, and milk. Beat well. Stir together flour, baking powder and baking soda, then fold into mixture. Pour batter into prepared muffin liners.

Bake 12 to 13 minutes in the preheated oven, until moist. Cool on a wire rack.

There are multiple ways to make muffins, and I have found that one brand of biscuit beats another. So I decided to give this recipe two starts. The first time I baked a dozen cookies and breads and ended up with 16 cows. The second time I made the biscuit and these turned out pretty good. But I had 15 to 20 mins TO chill the dough and then rise before baking. I had to bake again, this time with the milk/egg mix and also cooled the rolls for a few minutes. Mine even came out puffed up nice. About the only problem with this recipe is that you need to keep pressing the dough down with your fist to get extra "casserole" shape. Sometimes you have to retie the corners to get them to fit together properly. I haven't had any luck with that, and I believe I would try a different recipe if I didn't
