1/2 cup olive oil
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded mozzarella cheese
2 tablespoons minced onion
salt and pepper to taste
1/2 (6 ounce) can crabmeat, drained
1/2 cup chopped green onions
1 tomato, diced
2 cups shredded mozzarella cheese
Heat 1/2 cup olive oil in a large skillet over medium heat. Sprinkle cream cheese with mozzarella cheese. Mix in green onion and salt and pepper mixture to coat. Cook and stir until thickened. Remove from heat; mix with crabmeat, green onion, tomato and mozzarella cheese. Spread mixture into a 9x9 inch baking dish. Top with crabmeat mixture.
Bake uncovered in preheated oven for 30 minutes. Remove from oven and turn out onto a foil-lined baking sheet. Bake for 10 minutes to 2 minutes before stirring.
