1 tablespoon butter
2 tablespoons all-purpose flour
1 tablespoon all-purpose flour
5 skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C).
Place the butter in a medium saucepan over medium heat and whisk in the flour until smooth. Cook, stirring constantly, until thickened. Remove from heat and whisk in the chicken. Return to a medium heat, and add the chicken; cook, stirring constantly, until chicken juices run clear, about 10 minutes. Remove from heat.
Pour 1/2 cup of the chicken's juices into the bottom of a medium baking dish. Sprinkle with the remaining 1/2 cup of chicken broth. Brush egg and flour mixture over the chicken. Place on top of the chicken.
Bake uncovered in the preheated oven for about 1 hour, or until chicken is cooked through, and juices run clear. Remove from baking dish and allow to cool.
