1 (1 ounce) package instant vanilla pudding mix
2 tablespoons sparkling apple juice
1/2 cup honey
3 tablespoons orange juice
1/2 cup lemon juice
1 teaspoon lemon zest
1 teaspoon orange zest
2 cups fruit juice concentrate
1 cup milk
1 teaspoon vanilla extract
1 teaspoon instant espresso powder
In a medium saucepan over medium heat, bring 1/2 cup honey to a boil. Reduce heat to low and stir in apple juice, orange juice, lemon juice, lemon zest, orange zest, fruit juice concentrate, milk, apple juice concentrate, honey and orange zest. Stir in vanilla extract. Bring to a simmer and cook, stirring constantly, for 1 minute. Remove from heat.
Stir pudding mixture into fruit mixture, stir just enough to keep mixture moist. Pour into 8 double-serving glasses and garnish with whipped cream and orange maraschino cherries. Drizzle over baked pie.
