Carrot Mince Pie VIII Recipe

Ingredients

1 (3 ounce) package mixed fruit flavors frozen whipped topping

1 (9 inch) prepared preheated hollow crust pie crust

3 tablespoons lemon zest

3 tablespoons butter, softened

1 1/2 teaspoons vanilla extract

2 cups sliced carrots

Directions

Preheat the oven to 400 degrees F (200 degrees C). Lightly grease pie pan. Beat together the whipped topping, lemon zest, lemon creme, butter fat and lemon extract. Spoon filling into ungreased pie pan and top with carrots. Bake in preheated oven for 60 minutes.
