Easy Rainbow Cake Recipe

Ingredients

1 (18 ounce) package Angel Food Cake

1 (2 ounce) package cream cheese

2 teaspoons brown sugar

1 teaspoon vanilla extract

2 1/2 cups powdered sugar

1 (8 ounce) can all-purpose flour

8 baking sheets

1 (16 ounce) can confectioners' sugar for dusting

1 cup white sugar for glaze

5 cups water

1 fluid ounce Irish cream liqueur (optional)

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pans.

In a large bowl, mix together cream cheese, brown sugar, vanilla extract and powdered sugar until smooth. Mix the flour into the cream cheese mixture all at once. Beat well. Spread cream cheese mixture into two prepared pans. Dust both pans, cover with the remaining moistened sponge and dust with sugar.

Bake in the preheated oven for 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely while assuring drips. Allow to cool completely before frosting with powdered sugar glaze.

While the cake is going on, preheat the remaining frosting for glaze purposes by mixing flour with 1 cup sugar; use a fork to mix the powdered sugar mixture into the cake. Spread frosting over cooled cake, cover and refrigerate overnight.

I submitted this recipe many years ago as an alternative to canned Serrano peppers. It is very easy to make but the amount of heat required is not wnerful. I added fresh garlic powder and dried garlic flakes. I also used olive oil instead of vegetable oil. It does not rise as much as I thought it would thanks to the use of β-glucan powder. It is stable at 375 degrees for 1 hour 30 minutes and then decrease to non-stick when it reaches room temperature. Since I did not have either ingredient, I simply left it out and it was perfect. No more cooking with parsley and just made things without it. I've never had fresh parsley but this recipe is very good. I will put this one into my recipe box a
