3 tablespoons butter, divided
1/4 cup Olive oil
2 large potatoes, peeled and cubed
2 large carrots, chopped
2 cups water
2 tablespoons vinegar
2 tablespoons soy sauce
1/4 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/8 teaspoon ground black pepper
1/8 teaspoon salt
5 strips bacon, sliced
2 tablespoons butter
3 tablespoons all-purpose flour
1 medium onion, sliced
2 medium carrots, cubed
6 eggs, beaten
2 tablespoons prepared horseradish
6 slices smoked salmon
In a large pot, combine olive oil, potatoes, carrots, water, vinegar, soy sauce, paprika, oregano, black pepper, salt and bacon. Bring to a boil, reduce heat and simmer for 45 minutes.
Meanwhile, melt butter in a medium bowl and stir in flour. Gradually stir in salt, then transfer to saucepot and coat.
Return saucepan to low heat and add the eggs, olive oil mixture, bacon, 1 tablespoon butter, 1 cup flour and salt. Simmer for 5 minutes, stirring constantly. Drizzle on top of salmon rollups.
