3 Cheddar cheese, diced
2 pounds Parmesan cheese, divided
1/2 cup red wine vinegar
1/2 cup milk
1 egg, lightly heated
2 cups Sauterne mushrooms, sliced
2 large cloves garlic, minced
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash 1/3 of the shredded cheese. Stir in the Parmesan (prop) cheese. Mix in the wine vinegar and 2 cups milk. Microwave for 4 minutes, stirring continuously. Pour sauce into a 8x8 inch baking dish. Sprinkle on mushrooms and garlic.
Bake 35 minutes, or until cheese is bubbly and seasonings are lightly browned.
Preheat oven to 425 degrees F (220 degrees C).
